    Baked Hybrid with Bacon and Onion

    Found a fantastic way to cook hybrids during the holidays. Filet a hybrid - I had one about four pounds - and soak the filets in saltwater over night. Spray a pan with Pam, rinse the filets and lay them in the pan. Cover them with strips of bacon - took two strips for each filet from my four pounder. Slice an onion and lay onion rings on top of the filets and bacon.

    Cover the pan with tinfoil and bake in a oven at 350 degrees for about an hour. You might take the tin foil off and broil for a few minutes to brown it, be be careful!

    The filets I did this way were moist and flavorful, with no strong fish taste! Some of the best fish I have ever had! Unfortunately, the small leftover piece that I warmed up later was not nearly as good. Eat is all at one sitting!
